Happy Birthday to my handsome nephew. We had the opportunity to spend some time with AJ while we were in Oklahoma. I have not seen him in quite some time, so I wasn't really sure what to expect. He has grown into such a mature, good young man. It was such a pleasure to spend time with AJ and Hailey.

Our dancing Lindsey
Lindsey just loves to dance. At the sock hop they had a dance contest. The lady that is walking by Lindsey was handing out suckers as a way to let you know you were out of the contest. Greg said the suckers stood for "you suck...your out." I hope that wasn't true that seems a little harsh for elementary school. Lindsey is in the pink poodle skirt.

Hola' It's Fiesta Time...
My job at church is called Enrichment Leader. The Enrichment leader is in charge of an annual Relief Society Birthday party. This year we decided to have a Fiesta. I made the Salsa and Shredded Beef for the Taco bar. The food turned out excellent and everyone had a great time. I had all of these people calling me this morning wanting my recipes for the Salsa and Shredded Beef. I decided to share them with everyone.
D's Famous Salsa
2 Cans (14.5 oz.) Stewed Tomatoes
1 Can (14.5 oz.) Diced Tomatoes
1 Can (10.? oz.) Ro*Tel Diced Tomatoes with Cilantro and Lime
2 Cans (10.? oz.) Ro*Tel Diced Tomatoes with Green Chillies
1 1/4 Chopped Onion
1-2 Limes, Juiced (depending on taste)
2 1/2 tsp. Salt
1 Can Green Chillies, Chopped or Diced (I can't remember the size, but it's the small can)
1/3 Fresh Cilantro (Optional) I added it, but if you don't like a lot of Cilantro then you can leave it out.
The most important thing is to Drain the tomatoes really well. Since I didn't feel like chopping the onion I just put it in my food processor before the rest of the ingredients. After chopping the onion and cilantro place all the remaining ingredients in either a blender or food processor. Blend on low to desired consistency.
* The Salsa you tasted was made the night before, so the flavors had a day to blend together.
Shredded Beef
1 (4 pd) Rump Roast
Your choice: either 1 cup Chicken Broth or 2 cups Salsa ( I used the Salsa recipe above)
2 (7.75 oz) Can of Mexican Style Tomato Sauce (I got mine at Shopper's on the Mexican Food Isle)
*If you add the Salsa instead of Chicken Broth then skip the Garlic and the Salt and Pepper.
3 TBSP. Crushed Garlic
Salt and Pepper to Taste
1 Bunch Green Onions, Chopped
1 Cup Fresh Cilantro, Chopped
Place the frozen roast in the slow cooker. Pour the chicken broth or Salsa and the tomato sauce over the roast. Season with garlic, and salt and pepper to taste.
Cover, and cook on low for 9 hours. When done the roast should shred easily with a fork. Shred the roast into the juices, and mix in the green onions and cilantro.

Happy Birthday Steven!

Happy Birthday Steven!!! I hope you are going to have a great birthday. I am sorry that we will not be there to celebrate with you.
Steven is an excellent brother. He is such an amazing father and husband. I have loved watching him embrace these roles over the years. He has so much love for his family. It's a beautiful thing. Our family would not be the same without Steven. I really am so blessed to have two amazing brothers.

Happy Birthday Chad! Okay...I know your birthday was on April 15th, but I'm a busy girl and time has just been flying by this week.I feel so blessed to have Chad as my brother. From the time Chad and I have been young we have always been very close. Chad has so many wonderful qualities. Whenever I have the opportunity to spend time with Chad there is never a dull moment. Hopefully someday we can live closer so that we can spend more time together. This is a picture of Chad and Kathryne in Hawaii from last year.

Just like Sister-
Riding in the Escalade!
Yesterday was Savannah's first time in the Escalade. She had such a great time. If anyone got in front of the car she would wave her arms and yell, "No!" On a side note, I have a feeling we will end up with a lot of pictures of Lindsey making crazy faces and doing crazy things. We already have quite the collection. The weather has just been amazing here. I love Spring!

World's Best Strawberry Shake
How do you bring a week of fun to an end? Well, you stop by Braum's for a Strawberry milkshake. This shake was so good. There were so many fresh strawberries in it I could not believe it. Savannah didn't want to share hers, although I really couldn't blame her. Thanks for a week of fun Grandma, Papa, Aunt Tammy, Uncle Fred, AJ and Hailey.

My Colorful Lindsey
As we were packing for Oklahoma I walked into Lindsey's room and found her wearing two ballet skirts. One on her head and one on her waist. This picture describes Lindsey personality perfectly. She is a little wild, a little crazy, a whole lot of fun and very colorful. Our lives would not be the same without her, she brings a lot of happiness into our family.
